Awesome Apple Day 5 of the Raw Vegan Fruit Project
Raw Vegan Fruit Project:
The fruit for today is the amazing and awesome APPLE!
And here's the nutritional and otherwise interesting information I want to share with you about this fruit!
-Apples have been around for thousands of years and it's believed the Ancient Romans were the first people to cultivate this lovely fruit.
-An imprint of the fruit's seed was found in England dating back to the Neolithic period! (That's old!)
-They are one of the most popular fruits in the world, and today there are over 7.500 different varieties.
-One medium-sized apple contains about 80 calories.
-They are a great source of both soluble and insoluble fiber. Soluble fiber has been shown to help reduce the amount of cholesterol lining our blood vessels, and it's also been shown to help increase the amount of beneficial bacteria in our intestines. Insoluble fiber helps add bulk to our food, making it move more smoothly through our large intestine.
-Make sure to eat the skin because over 1/2 of the fruit's Vitamin C content is found just below the skin. Also, the skin is a great source of all that insoluble fiber.
-This amazing fruit contains flavonoids, which have been shown to help protect against heart disease and prevent certain cancers--they are a magnificent part of a heart-healthy Vegan Diet!
-They contain a lot of water, therefore they are moistening and cooling--they can help reduce a high fever! Just munch some slices/chunks and the fever may go down.
There you have some bits about this awesome fruit, now here's the Low Fat, Raw Vegan recipe featuring the fruit for Day 5:
APPLE-CUCUMBER SALAD WITH LEMONY-DATE DRESSING
A simple, sweet, perfectly tart, fantastic salad for any eating occassion! This salad contains just about 300 calories.
Ingredients:
2 apples, cored and cut into chunks
1 cucumber, cut any way you want
5-6 dates
juice of 1/2 lemon
2-3 tablespoons water
Preparation:
Blend the dates, lemon juice, and water until creamy. Put the apples and cucumber chunks into a medium-sized bowl. Pour the date-lemon lusciousnessover the apples and cucumbers and toss until the dressing is all over ever bit of fruit. Eat to your heart and belly's delight!
