Day 9 of the 30 Day Raw Vegan Fruit Project

Sliced Bell Peppers

Raw Vegan Fruit Project:

The featured fruit for Day 9 is the Bell pepper.

Here are some nutritional facts and a few other interesting bits of information for you about this lovely, raw vegan, nutrient-rich fruit:

-Yep, Red Peppers are considered a fruit. We just eat them/use them in foods like we do vegetables.

-Red Peppers are ripe green (bell) peppers!

-Bell Peppers (red, orange, yellow, green, white, purple, etc.) originated in South America. Pepper seeds have been found that date back to 5000 B.C.--whoa!

-Red Bell Peppers are extremely high in Vitamins A and C. Red Peppers contain 5 times by weight the amount of Vitamin C as citrus fruits!

-Red Bell Peppers have been shown to help prevent against certain cancers and reverse and prevent macular degeneration and cataracts. This because they are extremely high in antioxidants and other phytonutrients.

-One Red Pepper has around 50 calories and are a great source of dietary fiber!

-Did you know Bell Peppers are called "mangoes" in Ohio, Indiana, and Pennsylvania?

-Paprika is ground and dried Red Bell Pepper.

Ok, now for your Low Fat, Raw Vegan Recipe featuring the Red Pepper!!

Stuffed Red Peppers

Yet another quick, easy, super nutritious dish for your fruit-eating adventures! This dish contains about 300 calories.

Ingredients:

2 Red Peppers

1 head cauliflower

3 tablespoons nutritional yeast

2 teaspoons Mexican-style seasonings (or Italian seasonings)

1 teaspoon salt

1/2 lime juiced, optional

Preparation:

In your food processor (or chopping with knife) process the cauliflower until crumbly. Add everything else and process/stir just until well mixed (you don't want to "food process" the cauliflower too much, or it gets too wet and icky). Remove the tops and seeds of the peppers, then stuff with the cauliflower mixture. That's it. Refrigerate if you're not eating right away.

So there's Day 9 and some bits and yummy bites about the Red Pepper! Eat lots and lots of fruits and...
