MANGO THAI CABBAGE SALAD Refreshing, sweet, spicy, overflowing with flavor--absolutely marvelous!This salad contains approximately 400 calories. Ingredients: 2-3 medium-sized mangoes 1 head cabbage (medium to smaller) 1 red pepper (or jalapeno if you like spicy hotness) 1 bunch cilantro, rinsed and finely chopped 2 tablespoons rice vinegar, or lime juice pinch of salt (optional) Preparation: Peel and chop your man-goes into bite-sized chunks, set aside. Chop/slice the entire head of cabbage into thin pieces, then place into a medium to large salad bowl. Chop your red pepper into chunks--big or small, whatever you like. Add the pepper and chopped man-go to the cabbage. Add the cilantro, vinegar, and salt. Gently toss the salad until it seems like it's...well...well mixed. Serve chilled or at room temperature.
