Day 8 of the 30 Day Raw Vegan Fruit Project

Raw Vegan Fruit Project:

The fantastic fruit for Day 8 is the Nectarine!

-They have been around for over 2000 years and were first cultivated in Asia. We can thank the Spanish for bringing them to North America.

They are an excellent source of:

Fiber

Vitamin A

Vitamin C

Potassium

Niacin

-There are over 100 varieties grown throughout the world today!

-They are more fragile than peaches, so be careful with your delicate fruits.

AND NOW FOR YOUR LOW FAT RAW VEGAN RECIPE!

NECTARINE-SPINACH SALAD

This is a lovely salad--light, delicious, sweet, perfectly tart, and bursting with healthy ingredients! The entire salad contains right around 300 calories.

Ingredients:

2 nectarines, chopped

2 big handfuls spinach (rinsed, chopped if necessary)

2 tablespoons chopped pecans

1 orange

Preparation:

Grab that handy-dandy salad bowl of yours and throw everything in it except the orange. Put the orange into your blender or food processor and blend until smooth. Pour the blended orange over the top of the salad and gently toss. Munch munch away!
