Raw Vegan Fruit Project:

The featured fruit for today is the RASPBERRY!

-They are native to Europe and Asia.

-They are high in Ellagic Acid, which studies have shown does have cancer-preventing potential.

-They are a great source of Vitamin C!

-These lovely little berries are high in soluble fiber, which may help lower blood cholesterol levels. And while we're talking about fiber, 1/2 to 1 pound of raspberries contains 20-30 grams of fiber!

-One cup of berries has 64 calories--another high-nutrient, low calorie food.

-Xylitol, a "sweetener" comes from the raspberry.

-And finally, the raspberry is highly perishable, so eat them quick, or pop them into your fridge right away.

CACAO COVERED RASPBERRIES

Lovely, luscious, perfectly sweet, perfectly tart--chocolate raspberries--you can't go wrong here! This delicious dessert, or breakfast, or dinner, or lunch, or snack has only 150 calories-----you can eat and eat and eat lots of this!!!

Ingredients:

1 cup raspberries, rinsed

1 tablespoon cacao powder

1 tablespoon raw agave nectar

Preparation:

In a small bowl, stir together the cacao powder and agave nectar until smooth. Place the raspberries in a separate bowl, then drizzle the cacao "syrup" over the raspberries. Stir gently to cover each and every berry. There you go! Another low fat, raw, vegan recipe to help you incorporate more fruit into your life!
