We haven't really been making anything complex to eat. The fanciest "recipe" we whip up with regularity is our daily Banana, Date, Spinach Recovery Drink. Beyond that we pretty much just eat whole food, no preparation.
But...Here is one low-fat raw vegan recipe that we eat from time to time.
Kirsten & Derrick's Low-fat Raw Waldorf Salad
Colorful, Zippy, Nutritious and Delicious!
Ingredients:
2 Bananas
1 Lime (half if you want less tartness)
2 Apples
1/2 Carrot
1 Stalk of Celery
1-2 Tbsp of Chopped Walnuts
Preparation
Blend the lime and bananas in your favorite blender (ours is a Blendtec Total Blender, some prefer the Vita-Mix Blender. Both of these are high-power blenders perfect for making all kinds of raw treats.) until smooth. Set aside.
