This Raw Food Challenge isn't really a challenge. It is more like an exciting eating adventure.
Derrick and I have been experimenting with various ways to eat and serve raw fruits and veggies, and while playing around in the kitchen, I created some simple, low fat, raw, vegan goodies certain to make you smile (we smile when we eat these!).
Today I'd love to share with you two scrumptious recipes for a fruit and/or veggie dip, drizzle, or dressing.
The first is:
Banana-Cacao Fruit Dip or Drizzle
Ingredients:
1 ripe banana
1 Tbs raw cacao powder
Preparation:
Place these in your blender or food processor and blend until smooth and creamy. This makes about 1/4 cup. Apples, pears, mango, and papaya are delicious dipped into this delightful treat. I love this drizzled over a fruit salad also. (You could replace the banana with 2-3 soaked dates, or add a soaked date for added sweetness.)
The second is:
Banana-Orange Fruit or Veggie Dip or Drizzle
Ingredients:
1 ripe banana
1 orange
Preparation:
Place the banana and orange in your blender, then blend away! Blend until it's smooth and super creamy. This recipe makes close to 1 cup. In addition to being a wonderful dip for all fruit, this makes a delicious dressing over a bed of greens. I love this as a dip for celery and cucumbers too.
Both of the above recipes are low in fat, raw (of course), and so very good for you, your family and friends, and anyone else with whom you'd like to share some healthy, life-giving, vibrant foods! Happy eating!
