One of the cooked things we miss eating this low-fat raw food diet is crunchy food. You know, things like roasted nuts and chips. Well, we were sure pleased to discover kale chips.
Kale chips are made from dehydrating kale at low temperature(below 105˙F). And, the best part, they are delish!
Here is how we make ours:
Ingredients:
2 Bunches of Organic Kale
Juice of 1 Organic Lemon
1/2 tsp of Sea Salt(salt is optional)
Black Pepper to taste
Preparation:
Rinse your kale and dry it. Mix lemon, salt and pepper. Toss the kale in the lemon mixture. Place kale on dehydrator and dehydrate over night at about 105˙F.
We use an Excalibur 2400 4 Tray Dehydrator. We like this dehydrator because it dries very evenly and you can control the temperature fairly precisely.
