Raw Food & Fitness-Day 56

It is day 56 of our 100-Day Raw Food & Fitness Challenge! Today we met the maker of the best Kale Chips on the planet, Laurie of Healthy Kitchen(www.healthykitchenpdx.com )

Laurie is one of those rare and wonderful people who act on their vision of making the world a better place. She does it one fantastic bag Kale Chips at a time.

While her appreciation of delicious, nutritious food began at a young age, it wasn’t until Laurie was diagnosed with stage 2+ breast cancer at age 40, that she fully realized the connection between food and health. She underwent several major surgeries, chemotherapy and radiation. Her oncologist was impressed with the speed with which she healed and regained her energy.

Laurie attributes much of this to her healthy diet and lifestyle choices. When her treatment ended, she enrolled in the Nutritional Therapy Association program of which she is now a graduate and completed an intensive study in raw eating with Bruce Horowitz..

During her treatment, Laurie continued to study nutrition for her family and for herself. She had many days that she was too sick to prepare meals and wished that there was someone who could understand all of the different nutritional needs of her family members and prepare them a healthy meal that they could all enjoy.

Laurie’s hope is that she can be the person she once wished for in helping others be able to enjoy healthy meals that fit their individual dietary needs.
