Raw Food & Fitness-Day 58

It's Day 58 of our 100-Day Raw Food and Fitness Journey and it's a chilly, windy gray day here in the Pacific Northwest. It's one of those days, on of those perfect days to create something delicious in the kitchen. Because we're eating a Raw vegan Diet, I won't bake bread, cookies, or a cake (which I certainly would've done were it not for this Raw Food and Fitness Journey). Instead I'll make something nutty, datey, lemoney, and positively scrumptious!

Cashew-Lemon-Date Bars

How do Raw Cashew-Lemon-Date Treats sound? These goodies are quick and easy to make (I'm into "quick and easy"--it's fairly obvious, huh? I think I only make "quick and easy" things.), you can shape them any way you desire, they're contain lots of good-for-you nutrients, and are quite filling! They'll make a handy and convenient snacks, a yummy dessert, or the perfect sweet way to start or end your day!

For this very versatile Raw Food Vegan Cashew-Lemon-Date bit of yummy heaven, you'll need:

Ingredients:

15 pitted whole dates (medjool, deglet, or some other variety) or 10-12 coconut date rolls

1 1/2 cups raw cashews

juice of 1/2 lemon

If you're using whole dates, I recommend grinding the dates and raw cashews separately (in your food processor), then combining them (again in your food processor) until well mixed. Add the lemon juice and process for just a few seconds.

If you're using coconut date rolls, blend these in your food processor until they're crumbly, then add the cashews and lemon juice. Process until well mixed. Depending on whether you like things chunkier or smooth, process until the mixture is fairly smooth, or leave the cashews in small chunks or crumbs.

This makes approximately 2 1/2 cups. Shape into balls, bars, or whatever suits your "shape fancy." Store covered in your fridge.
