It's Day 66 of mine and Derrick's 100-Day Raw Food and Fitness Journey, and today I have a recipe to give to you that's become almost a staple in our house over the past few weeks.
Even though the kids aren't eating 100% raw, they're definitely eating more raw fruits and veggies. The funny thing is though, Eris love love loves fruit, but avoids veggies at all costs, and Max isn't a big fruit fan, and chooses veggies over fruits. And being a typical 2 year-old, he doesn't eat much, but seems to be chronically hungry. Fortunately (I think) he really likes raw nuts mixed with dates (nuts, of course have more fat and calories than veggies, so seem to be good "fuel" for busy little bodies). So here's the raw food recipe for Walnut-Cinnamon-Date Balls:
Walnut-Cinnamon-Date Balls
You'll need a food processor or excellent blender for this one.
Ingredients:
2 cups dates--pack the dates into your measuring cup until the cup is full
3 cups walnuts
1 tablespoon (or more, if you like) of cinnamon
salt to taste
Preparation:
Process the nuts and dates separately, then place all the ingredients in the food processor and mix until it seems like everything is well...well mixed! Depending on the size of your food processor, you may not be able to process everything all at once--no biggie. Just split it up and do what you can.
When the mixture resembles a fine meal, or the nuts have been "chopped" into tiny bits, roll into bite-sized balls. This recipe makes a lot of balls, so feel free to cut the ingredients in half.
