Raw Food & Fitness-Day 69

It's Day 69 of mine and Derrick's 100-Day Raw Food and Fitness Journey, and today I want to encourage everyone out there to eat some kale!!! I couldn't stand kale before embarking on this Raw Food and Fitness Journey...I avoided it at all costs--no kidding! Occasionally I'd manage to slip in a few leaves of chard in a smoothie, but other than that, the greens I'd eat were limited to spinach and romaine lettuce. But not anymore...

Kale is Cool!

I like kale! I actually look forward to my nightly salad--a huge bowl filled to the brim of mostly kale and some romaine lettuce (and dressing). I love kale chips too (see past post for making kale chips), and maybe it was the kale chips that helped my "transition" to raw kale (the kale chips being dehydrated until perfect crunchiness). Or maybe my body, after eating such a great diet for the past 60+ days, knows what's "good for it" and has gotten over disliking kale. I don't know. It doesn't really matter, right? I'm loving eating such a magnificent, magical, immensely nutritious raw food!

Kale will make you look better, feel better, improve your digestion, and help with all kinds of health concerns. It's loaded with vitamins, minerals, phytonutrients, and has more protein than any animal product (calorie for calorie). And eating kale for protein is so much better for you and the planet!

So go get some kale! Add some to a green salad, put a few leaves in a smoothie, toss some kale in with your chopped fruit salad--eat kale on a regular basis, and I promise it will help you feel fantastic!
