Raw Vegan Fruit Project:

The Perfect Fruit For Day 13 is The Pinapple!

Here are the bits and bites of nutritional info and some other interesting facts about this lovely fruit I wanted to share with you:


-Pineapple is believed to have first originated in South America, and soon after grown in the Caribbean.

-Pineapples were coveted by the early American colonists.

-Pineapple became a sought after symbol of prestige and social class. Because fresh Pineapples were rare and quite expensive, all a party host/hostess had to do was use the fruit as a centerpiece, and he/she would looked upon with high regard and awe.

-The area closer to the base of the fruit has more sugar content and therefore a sweeter taste and more tender texture.

-One cup of diced pineapple contains about 75 calories.

-Pineapple is an excellent source of manganese and Vitamin B1. These nutrients help in energy production and have antioxidant properties.

-For Vitamin C and fiber, eat some pineapple!

-Pineapple contains bromelain, which has been shown to help improve digestion. Studies have shown bromelain may also prevent blood clot formation.

-Fresh pineapple juice is also used in removing intestinal worms.

-Pineapple juice can help prevent nausea (including morning sickness and motion sickness).

Alrighty, there you have some fantastic reasons to eat more Pineapple, now let me give you a LOW FAT, RAW VEGAN RECIPE FEATURING PINEAPPLE!

PINEAPPLE SANDWICHES

This is a fun recipe to make. And yes, it's refreshing and delicious too! This yummy sandwich has about 400 calories.

Ingredients:

1 pineapple, pokey skin removed, sliced horizontally (you want pineapple rounds, about as thick as a slice of bread, or 1/4 inch thick)

2 bananas, sliced

Several Romaine lettuce leaves

Preparation:

Take 2 "rounds" of pineapple, put a few slices of banana and 1-2 pieces of lettuce on one round. Place the other round on top and there's your sandwich. Cut into quarters and place toothpick in center to hold it all together. Repeat. So there you have some Pineapple Sandwiches--you'll love these! (For some additional yumminess and 100 calories, blend 1/2-1 cup berries and 1 tablespoon agave nectar, then pour over the top or inside of the sandwich.)

Eat more raw fruit. Eat more Pineapple!
