Raw Vegan Fruit Project:

The featured fruit for Day 28 is the Kiwifruit!

Here's some interesting trivia regarding the fruit's name--Kiwis originated in China, and were originally known as Yang Tao. In 1960, they were renamed the "Chinese Gooseberry", then again renamed "Kiwifruit" in 1962.

-As for choosing a kiwi, the fruit should give a little when pressed. Don't buy overly mushy or bruised kiwis. If you happen to choose one that's no quite ripe, pop it into a paper bag (with a banana, apple, or pear) and it should ripen in a day or so.

-Kiwifruit helps protect your blood vessels and heart.

-Kiwifruit help reduce triglyceride levels in your blood.

-Kiwifruits provide fantastic free-radical protection (thanks to the Vitamin C and E, specifically).

and now for your LOW FAT, RAW VEGAN RECIPE featuring KIWIFRUIT...

KIWI CHUTNEY

A delicious topping, filling, or meal all on its own--it's quick to make, full of fantastic flavors, and quite a delight to see! Kiwi Chutney has just about 300 calories. Serve this dish on top of a bed of greens (in a salad), rolled in your favorite leaves of greens, as a dip for celery, carrots, and cucumber wedges, or just eat it by itself! It's super yummy!

Ingredients:

4 kiwifruits, peeled and chopped

1 banana, peeled and chopped

1/4 onion, finely diced

1 pepper, finely chopped (you choose the variety)

juice of 1/2 lemon

1/2 teaspoon curry powder

1/4 teaspoon allspice

1/4 teaspoon chili powder (more of you like it hotter)

Preparation:

In your favorite small to medium-sized bowl, place all of the ingredients and gently stir. That's it, all, and the sum total of all you need to do for this spectacular dish-of-a-meal! Refrigerate any leftover, or if you'd like the flavors to meld a bit.

Eat kadootles of kiwifruits!
