Zippy Italian Zucchini!

Raw Vegan Recipes Rock!


ITALIAN-STYLE ZUCCHINI

What a meal this is! It's savory, juicy, herby--absolutely overflowing with flavor, yet so very easy to prepare! This dish has right around 300 calories.

Ingredients:

4 zucchinis, finely chopped

4 tomatoes, diced/chopped small

1/4 cup nutritional yeast flakes

1 tablespoon balsamic vinegar or juice of 1/2 lemon

1 tablespoon Italian seasonings

pinch of salt (optional)

Preparation:

Put all of the above ingredients into your most favorite big bowl, then toss gently. That's that. That's all you have to do for one of the most nutritious and delicious meals in the universe! Serve this with your favorite greens for some added yuminess.
