The Super Strawberry! Day 2 of the 30 Day Raw Vegan Fruit Project
The Fruit for today is the STRAWBERRY!
Here are some fun facts, important nutritional information, and interesting trivia about Strawberries:
-Strawberries have been around for thousands of years! They were highly prized by the ancient Romans.
-Strawberries are the world's most popular berry fruit.
-Strawberries are the only fruits with the seeds on the outside of the skin.
-The Strawberry is a members of the rose family.
-There are over 600 varieties of strawberries!
-Strawberries are high in vitamin C, making this great fruit helpful in cases of rheumatoid arthritis.
-Strawberries are a good source of fiber and manganese.
-When selecting strawberries for eating, choose only those with a deep red color, shiny skin, and are firm to the touch. Make sure the strawberries you purchase all have those cute little "leafy" tops.
-Don't buy non-organic strawberries! Strawberries contain very high levels of toxic chemical pesticides.
And now for today's Low Fat, Raw, Vegan recipe featuring Strawberries!!
RAW VEGAN STRAWBERRY "CHEESECAKE"
The combination of the sweet dates and tart Pink Lady apple give this a flavor slightly reminiscent of "cheesecake." The strawberries make this a refreshing, positively delicious 300 calorie dessert, breakfast, late afternoon, or anytime meal or treat!
Ingredients:
6 dates, pits removed
1 Pink Lady Apple, cored
8 strawberries
1 tablespoon agave nectar
Preparation:
In your food processor/blender, combine the dates and apple until they've been chopped into tiny tiny chunks. Place this mixture on a serving plate and mush together and shape into a circle with a slight lip around the edge of the circle. Set aside for just a second.
Blend 4 of the strawberries in your blender along with the agave until smooth. Pour this over the top of the date-apple "cake."
Slice the remaining 4 strawberries and place all over the top of the cake, over the strawberry-agave "syrup."
