Raw Vegan Fruit Project:

The featured fruit for Day 19 is the TOMATO!

I'll start by sharing a little bit of interesting trivia, then I'll give you some health-related information:

This wonderful food is grown all over the world, and are the most popular "fruit" in the world (bananas are second, apples are third).

And yes, they are botanically fruits, but according to the 1863 US Supreme Court ruling they are to be considered vegetables.

There are over 10,000 varieties of tomatoes grown around the world today--ranging from the size of a marble to a variety weighing over 3 pounds!

now for some nutrition and health information:

-One medium/large fruit has about 25 calories


Tomatoes are high in:

Fiber

Vitamins A, C, E, K, B6, Niacin, Thiamin

Folate

Potassium

Phosphorous

Copper

Lycopene

Beta-carotene

-The jelly-like substance around the seeds contains the highest concentration of Vitamin C.

-One fruit provides over 1/2 of your daily recommended amount of Vitamin C!

-Tomatoes, because of their lycopene, have been shown to help prevent certain cancers.

-They are a natural antiseptic, therefore can help stop infections

-They are good for your skin (because of the lovely lycopene, beta-carotene, and all those vitamins).

-They have been shown to help purify blood.

Now, get ready for a totally tantalizing LOW FAT, RAW VEGAN RECIPE!

TERRIFIC TOMATO TABOULEH

This recipe is fantastic--light, refreshing, easy to make--it's great for potlucks too!Terrific Tabouleh contains 250 calories.

Ingredients:

1 head cauliflower

2-3 tomatoes (medium to large)

1 cucumber

1 cup finely chopped fresh parsley

juice of one lemon

pinch of salt (optional)

Preparation:

Finely chop the cauliflower until it's crumbly (you could use a food processor for this too), then place it into a medium-sized salad/mixing bowl. Chop your tomatoes and cucumber, and toss along with the parsley into the bowl containing the cauliflower. Pour the lemon juice over the top. Gently stir. Add the salt and mix just a bit more.You're Terrific Tabouleh is done! (Add a little raw olive oil, nuts, or avocado if you want more calories.)

Eat oodles of tomatoes!Eat gobs and gobs of fruit!
