Each one is easy to make, very versatile, and tastes as though straight from Banana Bread Heaven. In terms of a “dessert” bread, these recipes are low in fat and sugar, but delicious enough to have as a dessert...or snack, or with breakfast, or even lunch (two thin slices of banana bread with dab of your favorite nut butter between---so yummy). So mash those overripe bananas that have been sitting on your counter, and let’s make some Vegan Banana Bread! Vegan Banana Bread Recipe #1 This first recipe comes directly from one of our favorite vegan cookbooks, “1,000 Vegan Recipes ,” by Robin Robertson. Despite it being called a “cake,” this recipe is healthier than most banana bread recipes. Banana-Walnut Cake Ingredients: 2 cups all-purpose flour 2 ½ teaspoons baking powder ½ teaspoon ground allspice ½ teaspoon ground cinnamon ½ teaspoon salt 3 ripe bananas ½ cup plain or vanilla soy milk 1/4 cup canola or other neutral oil 3/4 cup sugar 2 teaspoons pure vanilla extract ½ cup chopped walnuts Preparation: Preheat oven to 350 degrees. Grease an 8-inch square cake pan and set aside. In a large bowl, the flour, baking powder, allspice, cinnamon, and salt and set aside. In a food processor or blender, combine the bananas, soy milk, oil, sugar, and vanilla, and blend until smooth. Add the wet ingredients to the dry and stir until just moistened. Do not overmix. Fold in the walnuts. Scape the batter in the prepared pan and bake until a toothpick inserted into the center comes out clean 35 to 40 minutes. Allow to cool in pan for 10-15 minutes before inverting it onto a wire rack to cool completely before slicing. Vegan Banana Bread Recipe #2 The next vegan banana bread recipe we have for you is a hearty, protein-packed, extremely filling batch of vegan banana bread. This makes you 2 loaves plus enough for a few muffins, or mini loaf of bread. Ingredients: 10 ripe bananas 2 tablespoons vanilla 1-2 cups sugar (depending on your desired sweetness) 4 cups spelt flour 2 teaspoons baking soda ½ teaspoon salt 2 tablespoons cardamom 1 tablespoon nutmeg 1 cup vegan chocolate or carob chips 1 cup chopped nuts--walnuts, pecans, or your favorite chopped nuts 1 cup pumpkin seeds 1 cup sunflower seeds 1/4 cup flax seeds, optional Preparation: Preheat your oven to 350 degrees if using a metal loaf pan, 325 degrees if using glass. Lightly oil 2 loaf pans and set aside. In your blender or food processor, blend until smooth the bananas, vanilla, and sugar. Set this aside. In a large bowl, sift together the flour, soda, salt, cardamom, and nutmeg. Pour the blended banana mixture into the flour mixture, and stir until well combined. Gently fold in the chocolate chips, nuts, and seeds. Pour the batter into the prepared pans and bake until a toothpick comes out clean, or for 65-80 minutes. Vegan Banana Bread Recipe #3 This vegan banana bread is simple, delicious, and a nice all-around bread for any occasion when you need a quick sweet treat; when you don’t have all the time and ingredients for something more complicated and time-consuming. Ingredients: 1 cup mashed bananas 1/4 cup water mixed with 1 tablespoon egg replacer ½ to 3/4 cup sugar 1/4 cup oil or applesauce (1/8 cup oil and 1/8 cup applesauce might be nice too) 1 teaspoon vanilla 2 cups flour 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda Preparation: Preheat your oven to 350 degrees. Lightly oil your favorite loaf pan and set aside. Mix until creamy the banans, egg replacer, sugar, oil/applesauce, and vanilla. In a medium-sized mixing bowl, sift together the flour, salt, baking powder and soda. Add the wet ingredients to the dry and stir until well mixed, but don’t overdo it.Pour into your prepared pan and bake for 45-60 minutes, or until a toothpick inserted into the center comes out clean.
