Vegan Recipes Applesauce Muffins
Delicious Vegan Recipes for Vibrant Living! Applesauce MuffinsThese Muffins are perfect for breakfast, a mid-morning snack, even an after-dinner dessert! They’re moist, slightly sweet, and a perfect baked goodie to munch if you’re craving a higher fat, higher sugar, lower nutrient treat (ie cookie, donut, piece of cake). Sweetened with applesauce and a touch of maple syrup, these muffins won’t spike your blood sugar (which later causes you to store fat) like a more conventional muffin. This vegan recipe will take approximately 20 minutes to prepare, and it’s well worth the time. You’ll be thanking yourself for baking you something this delicious. So pour yourself a warm cup of tea, grab your favorite book, and savor an applesauce muffin. Ingredients : 1 cup wheat or spelt flour * 1 cup unbleached white flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon sea salt ½ cup chopped walnuts 1/3 cup raisins, chopped dates, or chopped dried figs 1 cup unsweetened applesauce ½ cup plain or vanilla soymilk mixed with 1 tablespoon apple cider vinegar 2 tablespoons oil 1/3 cup maple syrup Preperation:Preheat your oven to 375 degrees. Lightly oil (or spray) your muffin tin. In a bowl, combine the first nine ingredients. In a separate smaller bowl, whisk the applesauce, soy milk-vinegar mixture, oil and maple syrup. Stir the wet into the dry ingredients just until moistened. Fill the muffin tins ¾ full, then bake about 18-20 minutes, or until toothpick comes out dry. This makes 12 magnificent muffins. *Experiment with different flours. Try ½ oat and ½ spelt, or use rice or buckwheat flours. With any baked good, we recommend substituting smaller amounts of flours in the beginning (1/3-1/2 versus totally replacing the entire called for amount of flour), so if you totally want to replace a flour called for in a recipe, you’ll eventually reach your desired texture-of-liking. (Slowly replacing will prevent you from having a baking disaster, then feeling totally frustrated and never trying a recipe again.) Have fun with your baking and cooking. Substitute all you want.
