Apricot Curry Sauce

Apricot Curry Sauce

This is a nice mellow sauce that can be used to top just about anything! Drizzle over brown rice (or other whole grain) and veggies, steamed veggies and tofu, pasta and veggies, or simply pour a bit of Apricot Curry Sauce over a huge bowl of just vegetables—it’s versatile, tasty, nutritious, and low in calories.

Ingredients

½ cup unsulphered dried apricots, soaked for at least 8 hours in enough water to cover

2 cups apricot nectar (choose a variety without any added sweeteners)

¼ cup maple syrup or agave nectar

2 tablespoons curry powder (mild or spicy, depending on your preferences)

Salt to taste

Place all ingredients in a blender and blend until smooth. Enjoy!
