Vegan Recipes Black Bean Soup
Delicious Vegan Recipes for Vibrant Living! This is one of the easiest, most delicious soups you’ll ever make! It’s quick (it will take less than 30 minutes), has a just a few ingredients, and is a great meal on its own, or goes well with a fresh garden salad. Black beans are a source of plant proteins and contain one of the highest antioxidant amounts of all beans. The tomato paste is a wonderful source of another magnificent antioxidant, lycopene. In addition to the high antioxidant content, this soup is rich in fiber, vitamins, and minerals. You will be pleasantly satisfied after eating a bowl or two of this low fat, nutritious soup. Ingredients: 1 can tomato paste ˝ cup hot water 2 cups vegetable broth (canned is much faster, unless you happen to have homemade stock at home) 1 onion, chopped 2 cups cooked black beans (canned are just fine) 2 cloves garlic, minced 1 teaspoon cumin ˝ cup fresh cilantro Place all of the ingredients in a large pot and cook on medium heat for approximately 10 minutes (the onions should be tender). After the 10 minutes, remove ˝ of the soup from the pot and put into a blender or food processor. Blend until almost smooth (you’ll want it to be a little chunky). Return the blended half to the pot and gently stir until well combined with the un-blended soup. If you’d like, add more veggies to the soup to make it even healthier—a chopped carrot, maybe a green or red bell pepper… This serves 2-4 people.
