Delicious Vegan Recipes for Vibrant Living! Finally! A low fat, low sugar, healthy Blueberry Muffin recipe! Ingredients: 3/4 cup whole wheat flour 3/4 cup white flour 1/2 cup cornmeal 1 Tbs ground nutmeg 1 Tbs baking powder 1/4 tsp salt 1 cup soy or rice milk 1/3 cup maple syrup 1 cup blueberries, fresh or frozen Preparation: Preheat oven to 350 degrees and lightly oil a muffin pan. In a medium-bowl, sift together the first 6 ingrediients. In a liquid measuring cup, or small bowl, stir together the soy/rice milk and maple syrup. Add the soy milk and syrup mixture to the dry ingredients and mix well. Once it’s well combined, slowly fold in the blueberries and stir just until they’re well distributed. Spoon batter into prepared muffin pan. Fill individual muffin “cups” about 2/3 full. Bake for 20-25 minutes. This recipe makes approximately 1 dozen muffins.
