Vegan Recipes Sweet Dill Carrots & Lemon Carrots
Delicious Vegan Recipes for Vibrant Living! Two tasty, easy to prepare recipes for carrots—something other than carrot sticks! These are both wonderful complements to any whole grain, like steamed rice or quinoa. Sweet Dill Carrots 6-10 medium carrots, sliced 1 tbsp dried dill 1 tbsp sweetener 1 tbsp hemp, flax oil, or olive oil (hemp and flaxseed oils are good sources of omega-3 fatty acids) In medium pot or steamer, steam the carrots until tender. Place the carrots in a small bowl and add the rest of the ingredients. Stir together until ingredients are well mixed. Makes 2-4 servings. Lemon Carrots ˝ cup water 5-6 medium carrots 1/2 tsp lemon juice (add a touch more if you enjoy tartness) 2 tbsp maple syrup 2 1/2 tbsp fresh rosemary, chopped 1 tsp salt 1 tsp pepper In medium saucepan, bring water to boil. Add the carrots and simmer until carrots are almost cooked. Stir in the lemon juice, maple syrup, rosemary, salt and pepper and simmer on low heat for 5 more minutes. Makes 2-4 servings.
