Coconut-Peanut Veggie Sauté

Another delicious way to add more veggies to your life!

This veggie sauté contains red peppers, which are a great source of vitamin C, contain high levels of antioxidants, and have been shown to reduce the risk of heart disease.

It also has garlic and onions which reduce the risk of heart disease and stroke, and the broccoli contains folate, vitamin C, and quite a bit of calcium.

In addition to the fiber, this dish is overflowing with magnificent nutrients!

Ingredients

1 large red bell pepper

1 cup chopped broccoli

1 small carrot, chopped

1 15 ounce can baby corn

12 medium mushrooms, sliced

1 small red onion, sliced

2 large garlic cloves, minced or pressed

1 tablespoon tamari or Bragg’s Liquid Aminos

Juice of one lemon

For the sauce

1 cup light coconut milk

2 tablespoons peanut butter

½ tablespoon tamari/Bragg’s Liquid Aminos

Sprinkling of red pepper flakes and cayenne (omit if you’re not into spicy foods)

½ to 1 inch piece ginger, peeled and pressed through garlic press or minced

In a wok, frying pan, or skillet, add the garlic, lemon juice, and tamari and sauté for one 1-2 minutes. Add the rest of the chopped veggies and stir until cooked, but still crunchy. Stir all of the sauce ingredients together and pour over the veggies. Mix it all up until veggies are well coated. Serves 2-4. If you need a heartier meal, serve with rice or other grain.
