Fun Fruit Parfait!

Delicious Vegan Recipes for Vibrant Living!

I love vegan recipes that can be used for more than one meal, and this one is perfect for breakfast, brunch, or a dessert!

It’s totally nutritious because no matter which fruit you choose to use, your sure to get a fabulous dose of antioxidants, phytonutrients, and fiber.

The soy yogurt provides you with a small amount of healthy fat, protein, isoflavones, and small amounts of vitamins E and K.Fruit Parfait is also a beautiful dish.

It’s fun to assemble, it tastes great, plus it looks oh so pretty! (Make this ahead of time because if you want to keep the layers completely separate it has to freeze for 2 hours between layers.)

Ingredients:

First Layer—it’s red!

1 cup frozen red fruit of choice (strawberries, raspberries, etc.)

1 tablespoon maple syrup

¼ cup berry flavored soy yogurt

(optional—sprinkle 1 tablespoon your favorite lowfat granola before adding the second layer)

Second Layer—you could make it either white, yellow, or green!

1 cup frozen fruit of choice (bananas, peaches, nectarines, apricots, kiwis)

½ cup soy yogurt (I recommend lime, lemon, mango, or a non-berry flavor)

1 tablespoon maple syrup

Top with a drizzling of soy yogurt, a few pieces of fruit, and if desired, a spoonful of granola or raw nuts.

Preperation:

Blend the first layer and spoon into parfait glasses, or any long and thin cup you have around. (We don’t own parfait glasses, and instead just use small juice cups.) Place in freezer for 2 hours. Next, blend the second layer ingredients, then spoon them on top of the first layer. Place in the freezer for another 2 hours. Remove from freezer and let thaw for maybe 30 minutes. Spoon on some topping and enjoy!

Makes 3-4 servings.
