Ingredients: 1 cup chopped apple 1 cup chopped orange 1 cup chopped strawberries 1 cup blueberries, blackberries, raspberries, or other berries of choice 1 cup grapes ¼ cup shredded coconut ¼ cup chopped walnuts or almonds 1 cup vanilla soy yogurt (or less, none if you want to make this raw) Place all ingredients except soy yogurt in a medium-sized bowl. Gently combine. Pour soy yogurt into bowl, and stir (yes, gently) until yogurt is well distributed. This salad serves 2-4. Refrigerate in covered container if you don’t plan to eat right away.
