Glorious Glazed Broccoli

Delicious Vegan Recipes for Vibrant Living!

Here’s a dish with one of the most nutritious veggies at its center—broccoli. Broccoli is a great source of antioxidants, fiber, and vitamins and minerals. This dish goes well with a serving of rice or quinoa, or your favorite bean.

It’s lovely with tofu too. Glazed Broccoli is a quick and easy dish to prepare and low in calories, so make it often and enjoy!

Ingredients:

2 cups fresh broccoli, chopped

1 medium red onion, thinly sliced

1 tablespoon rice vinegar

1 tablespoon stone ground mustard

1 tablespoon maple syrup

½ cup raisins (optional)

Steam broccoli and onion until tender, then drain and set aside. In a smaller bowl, combine the vinegar, mustard, and maple syrup.

Pour the syrup/mustard glaze over the broccoli and onions and gently stir until evenly coated. Garnish with raisins. Serves 1-2.
