Vegan Recipes Nutty Chocolate Cake
Delicious Vegan Recipes for Vibrant Living! Wonderfully Delicious Nutty Chocolate CakeDesserts are my (Kirsten) favorite thing make! But it’s been a challenge finding healthy, lower calorie alternatives to the higher fat, higher calorie vegan recipes with which most cookbooks are filled. I don't know about you, but, I have to have dessert almost every night. It is true, I really do. It’s not always cake or some other sweet baked goodie, but I do have to end my meals with something sweet! Sometimes it’s fruit, other times it’s a small piece of cake…So here’s a recipe we created for those of us who still want dessert, but one with fewer calories and a lot more nutrients than those we’re accustomed to before deciding to lose weight and get healthy Ingredients: ½ cup walnuts, almonds, pecans—very lightly toasted 1 tablespoon egg replacer 4 tablespoons water ½ cup applesauce ¼ cup dates, pitted and mashed 1/3 cup maple syrup 1 teaspoon almond extract 1/3 cup soy or rice milk (use unsweetened if possible) 6 tablespoons cocoa powder 1 ¼ cup whole wheat, oat, or spelt flour 2 teaspoons baking powder Preparation: Preheat oven to 375 degrees. Over medium heat, toast the nuts of your choice in a dry skillet for 3-5 minutes, or until you begin to smell a yummy nutty aroma. Let them cool, then grind them until crumbly, or almost powder-ish, and place them into a mixing bowl. Combine egg replacer and water in a food processor and blend until fluffy. Next add the applesauce, dates, syrup and almond extract, and blend it all up very well. Add dry ingredients to your ground nuts and mix. Add the wet ingredients to the dry and stir until well combined. Pour batter into your favorite (non-stick or lightly oiled) cake pan (rectangular, bundt, round, etc.) and bake for 30-35 minutes, until knife/toothpick comes out clean. Frosting If you’re a cake frosting lover (this cake is great without anything on top), blend these three miracle ingredients: 1 package MoriNu lite silken tofu 2 tablespoons cocoa powder 2 tablespoons maple syrup Put these ingredients into your blender, blend until smooth and creamy.
