Rice Lentil Soup

Delicious Vegan Recipes for Vibrant Living!

Soups are the perfect meal after a long day.

Soups calm us, ground us, and help us feel cared for and loved.

This soup is filled with some awesome ingredients as well, thus you’ll be caring for yourself (and others) on so many levels when you make it.

Lentils are rich in antioxidants, protein and fiber. The greens are wonderful sources phytonutrients and fiber (protein too!), and the brown rice is a good source of folic acid and fiber.

As you can see, this soup is rich in fiber, protein, and lots of other goodies to help you feel magnificent!

Ingredients:

5 cups water

½ cup lentils, rinsed

¼ cup brown rice, quinoa, barley, or other favorite grain

½ cup diced celery

5 cloves garlic, minced

1 onion, chopped

1 tablespoon onion powder

3 tablespoons tamari/liquid aminos

½ tablespoon cumin powder

½ teaspoon cinnamon

1 tablespoon Italian seasonings

3 cups chopped greens—kale, chard, spinach, etc.

In a large stock pot (or some other deep pot) bring the water to a boil. Add the lentils and rice (or whatever grain you choose) and garlic, onions, and celery.

Let these cook covered over low heat for 15-20 minutes.

Add everything else and let it all simmer for 40 minutes to 1 hour. Add water if you like it more “soupy.”
