Vegan Recipes Roasted Sweet Potatoes
Delicious Vegan Recipes for Vibrant Living! Crispy on the outside, soft and sweet on the inside, these sweet potatoes are a fantastic side to any meal. Baked instead of fried, they’re low in fat and easy to prepare. Sweet potatoes are an excellent source of beta carotene too. For those of you who can’t tolerate too much “spice,” reduce the amounts of the spices, or completely remove them from this dish. These are great roasted with just salt (and pepper) too. Ingredients:4 large sweet potatoes* rinsed and cut into ¼” chunks or strips 2 tablespoons olive oil ¾ teaspoon paprika ½ teaspoon ground cumin ½ teaspoon Italian seasoning ½ teaspoon cayenne ½ teaspoon sea salt Heat oven to 450 degrees. Lightly oil a large baking sheet. In a mixing bowl, toss the sweet potatoes with the olive oil. Mix the spices and salt together, then toss into the sweet potatoes and coat. Spread the potatoes evenly on the baking sheet. Bake for 20 minutes. Using tongs, turn the potatoes and bake another 12-15 minutes, or until golden brown. Serves 3-6. *Yams or potatoes can be substituted for the sweet potatoes.
