Seriously Scrambled Tofu

Delicious Vegan Recipes for Vibrant Living!

A wheat-free, sugar-free breakfast! This recipe is a quick and easy way to have a hearty and warm breakfast on any day of the week. Tofu can be found in almost all grocery stores these days, and for this recipe be sure to purchase firm tofu.

Tofu is made from pressed soybeans, which are a great source of plant protein, have been shown to lower LDL (bad) cholesterol and raise HDL (good) cholesterol.

The onions and garlic in this recipe contain many other micronutrients which are beneficial to our numerous body systems.

Scrambled Tofu is simple, nutritious, wheat and dairy free, low in fat and calories, and it tastes wonderful!

Ingredients:

1-2 tablespoons soy sauce/tamari/Liquid Aminos

2 tablespoons water

1 large clove garlic, minced

1 small onion, diced or sliced

1 package tofu (drain any excess water)

¼ teaspoon tumeric

½ teaspoon cumin

1 large or 2 small tomatoes, chopped

Preperation:

Heat the soy sauce and water in a skillet, add the garlic and stir. Add the onion, tumeric, cumin, and sauté for just a couple minutes until onion is tender. Next add the tofu, stir, and simmer for 5-7 minutes. Toss in the chopped tomato and cook for 1 minute longer. Remove from heat and serve warm.

Makes 2-3 servings.
