Spicy Rice

Delicious Vegan Recipes for Vibrant Living!

This rice will fit beautifully alongside a bowl of pinto beans, some guacamole, and a gorgeous garden salad. It’s a dish with a bit of a spicy bite, but one we think even those of you with “low spicy tolerance” will be able to handle and come to love after just a few fork-fulls. Delicious and nutritious (this is full of vitamins and other phyto nutrients), Spicy Rice is going to be another favorite as you continue on your path to magnificent health!

-Ingredients-

4 cups cooked brown rice (basmati, long/short grain, jasmine, etc.)

2 tablespoons olive oil

1 medium onion, chopped

½ cup celery, finely chopped

½ cup red/green bell pepper, diced

2 cloves garlic, minced

3 Roma tomatoes, chopped

1 small can chopped green chilis, or finely dice 1 small jalapeno pepper

3 tablespoons fresh cilantro, chopped

2 teaspoons lime juice, we recommend fresh

Pinch of oregano

Salt to taste

Place 1 tablespoon of the olive oil in a large skillet/frying pan and sauté onion and garlic until onion is transparent. Add the rest of the ingredients except for the rice and other 1 tablespoon of olive oil, and sauté for just a few minutes (the veggies will still be crunchy). Add the rice and olive oil, mix well. Serve this warm. Makes 6-8 servings.

Variations:

Add as many fresh veggies as you like—carrots, jicama, summer squash, etc.

Instead of eating with beans on the side, add ½ lb. tofu at the “sautéing veggies” point of the process

If you like it extra spicy, add some chili powder or cayenne
