Super Spinach Salad

Delicious Vegan Recipes for Vibrant Living!

Here’s a filling, nutrient-loaded (this salad is so nutritious!) crunchy, crispy, satisfying salad to have as a meal, or as an addition to any meal.

Feel free to add a handful of raisins, fresh apple chunks, nuts, pumpkin or sunflower seeds (these of course will add some calories). A teaspoon or so of your favorite healthy oil (flax, olive, hemp) would make this even more tasty!

Enjoy this salad and be certain that with every bite you are making yourself more vibrant, more alive!

Ingredients:

Spinach 2 cups chopped = 24 calories

Broccoli ½ cup =12 calories

Cabbage ½ cup shredded = 10 calories

Carrot 1 medium shredded =30 calories

Bell Pepper ½ a pepper = 10 calories

Tomato ½ cup chopped = 20 calories

Balsamic Vinegar 1 tbsp = 5 calories

Add some salt, pepper and your favorite herbs and spices to taste and enjoy.
