Vegan Recipes Stuffed Winter Squash
Delicious Vegan Recipes for Vibrant Living! Stuffed Winter SquashThis is a wonderful, warming dish for autumn or winter. Use your favorite winter squash—acorn, butternut, delicata, etc. It’s easy to prepare, and full of fiber and beta carotene (and other magnificent nutrients). Stuffed Winter Squash makes a tasty and nutritious dinner, late afternoon supper, even a weekend breakfast or brunch. Ingredients 2 small squash, cut in halves and seeds removed ¼ cup water 1 medium onion, diced 2 carrots, chopped 1 red/green pepper, chopped 1-2 zucchini, chopped (into small, but thick chunks) 1-2 cloves garlic, minced Preheat oven to 350 degrees. Lightly oil/spray a baking dish and set aside. Place squash halves (seeded sides facing down) into a pan or steamer basket with the water and steam for 15 minutes (the squash will still be a bit crisp). Put the steamed squash halves into prepared baking dish. Place remaining ingredients into a frying pan with just a small amount of water and lightly “water sauté” for a few minutes, stirring frequently. (You’ll want the veggies to stay crunchy, so don’t sauté for too long.) Remove veggies from pan and slowly spoon them into the squash halves. Bake for 20-25 minutes.
