Delicious Vegan Recipes for Vibrant Living! Ingredients: 6 corn tortillas ½ pound firm tofu 2 cups chopped broccoli (frozen or fresh) 2 tablespoon soy sauce/tamari/Liquid Aminos 1 small onion, chopped ¾ cup your favorite salsa, or 2 tomatoes and 2 bell pepper, chopped Preperation: Cut tortillas in half, then into ½” strips. Cut tofu into small cubes. Place tortilla strips in oven and toast just until slightly crisp. In a skillet, heat tamari/Liquid Aminos on high and add tortilla strips and sauté until crisp—stir quickly and frequently. Next add the onion, and broccoli and continue stirring for 3 minutes. Add the tofu and stir for a couple minutes more. Serve warm with salsa or chopped tomatoes and peppers on top. Add ¼ to ½ avocado if desired. This serves 2-3.
