Seasoned Tofu in Veggie Nest

Hot tofu nestled in fresh veggies is a refreshing, filling, and low-calorie meal. This dish is overflowing with nutrients. The soft tofu and the crisp veggies create a sumptuous contrast of textures with each delicious bite. This makes a great lunch, dinner, or even breakfast! It’s quick and easy to prepare too.

Veggies:

2 carrots

¼ cabbage

2 celery ribs

1 tablespoon rice vinegar, or other slightly tart liquid (a few squirts of lemon juice, lime juice, or balsamic vinegar would be great)

1-2 teaspoons of sesame, olive, flax, or other healthy oil of your choosing

Tofu:

½ block of tofu, diced (firm is best)

½ cup peas (raw or cooked)

1 tablespoon lemon juice

½ tablespoon tamari or soy sauce

1 teaspoon fresh ginger or dried Italian seasonings (depending on the flavors you’re craving)

Buckwheat, alfalfa, and/or sunflower sprouts

1. Finely shred or chop the veggies. Toss with the lemon juice/vinegar and oil.

2. Saute the tofu and peas in the liquids until hot and tender.

3. To assemble, press the veggies into and circular nest-like shape in separate bowls, scoop the tofu into the veggies. Surround the veggies and tofu with the sprouts.
