Tomato Avocado Salsamole

Delicious Vegan Recipes for Vibrant Living!

This fresh tomato and avocado dip is the perfect compliment for a handful of organic tortilla chips or to any of your Mexican inspired meals

Tomato-Avocado Salsamole

2 servings 90 calories per serving

¼ cup finely chopped red onion

1 tsp minced jalapeno

1 tbsp lime juice

1 tbsp cider vinegar

1 tsp minced garlic

¼ tsp salt

1 ripe avocado (preferably Hass), peeled, pitted, and coarsely mashed

1 medium tomato, chopped

1/4 cup chopped cilantro

Combine onion, jalapeno, lime juce, vinegar, garlic, and salt in bowl. Add avocado, tomato, and cilantro; stir well. Serve immediately or, to store, reserve avocado pit, add to mixture to prevent browning, cover tightly with plastic wrap, and refrigerate.
