Very Veggie Lentil Soup

Delicious Vegan Recipes for Vibrant Living!

This soup contains oodles of veggies, therefore it gives you an abundance of beta carotene, vitamins A and C, fiber, protein, and some amazing phytonutrients. It’s wonderful for you, easy to prepare, and, like all our recipes, it tastes extraordinary!

Ingredients:

1 cup dry lentils

2 cups water

1 bunch kale, chard, or spinach, chopped

2 carrots, chopped

1-2 zucchini, chopped

1 head cauliflower, chopped

½ small head of cabbage, chopped

1 red/green pepper, chopped

1 yellow onion, chopped or minced

3 cloves garlic, minced

1 teaspoon ground cumin

Salt and pepper to taste

Bring water to a boil in a large stock pot or large, deep pot. Rinse lentils in colander, then pour them into the boiling water. Return to a boil, reduce heat to medium and just let them cook, covered.

Meanwhile, chop all of the other ingredients, beginning with the onions and garlic. Once chopped, add the onions and garlic to the lentils. Add everything else to the lentils, except the kale (or chard or spinach, whatever you chose), and let it all cook covered for approximately 25 minutes, or until the lentils are soft. Be sure to stir occasionally. When the lentils are soft, remove the pot from the heat, stir in the kale, and let the soup cool for 10 minutes or so. Spoon into bowls and enjoy!
