Vegan Recipes Wheat Free Pasta Salad
Delicious Vegan Recipes for Vibrant Living! This is an amazing wheat-free pasta salad. You’ll find quinoa, spelt or rice pasta at your local natural foods market. Of course, it’s fine to use wheat pasta too—we just wanted to add something new to your pasta repertoire. Like all of our salads, this one does fantastically well on its own as a meal, or is a great side. It’s loaded with life-giving foods and will make you feel oh so healthy! Ingredients: ½ lb quinoa/spelt/rice pasta 10 artichoke hearts (we use canned, but if you’re feeling up to it, steam 10 artichokes until tender, and eat your way to the delicious hearts) ½ pound firm, drained tofu—cut into cubes ½ teaspoon chili powder or cayenne Juice of ½ lemon 3-4 cloves garlic, minced 2 tablespoons olive oil (extra-virgin, cold pressed is the best) 5-6 fresh basil leaves 15 green or black olives, pitted and sliced Start your pasta cooking, and in the meantime, steam artichokes, or drain canned artichoke hearts. When pasta is finished, drain and set aside in medium-sized bowl. In a small saucepan/frying pan, sauté garlic for a couple minutes in olive oil (very low heat), then add cubed tofu, basil, and olives. Cook until tofu is slightly golden brown color (about 5 minutes). Add tofu mixture and artichoke hearts to pasta and toss. Sprinkle with salt and pepper to taste.
