Vegan Recipes Whole Wheat Muffins
Delicious Vegan Recipes for Vibrant Living! Delicious, Nutritious, Versatile Whole Wheat Muffin Recipe for Weight Loss & Wellness If you like muffins, you'll love these! This is a tasty, easy to make whole wheat muffin recipe for weight loss and wellness. You can make these muffins sweet or savory, and they’ll be delicious! Ingredients: 1 1/3 cup whole wheat flour 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup dairy alternative milk, or water 3 Tbs liquid sweetener (maple syrup, agave nectar, apple juice concentrate, etc.), or water (use water if you’re making savory muffins) 1 Tbs canola oil 1 tsp vanilla (omit if you’re making savory muffins)** Preperation: Preheat your oven to 350 degrees. Lightly oil your muffin pan. In a medium-size bowl, sift together the dry ingredients. Mix the wet ingredients in a small bowl or liquid measuring cup and pour into the dry ingredients. Stir together until batter is wet, but be careful not to over mix. Spoon batter into prepared muffin cups and bake for 18-20 minutes. Gently loosen muffins after they’ve cooled for a few minutes (if it’s necessary to loosen). Cover with a kitchen towel and let rest for another 5 minutes. This recipe makes about 12 wonderful muffins. **For sweet muffins, it’s fine to add 1/4 cup chopped and soaked (for a couple of hours, or overnight). Don’t worry about soaking raisins though. For a more savory muffin, you could add a tablespoon or so of Italian seasonings, fresh chives, fresh, minced garlic, and/or 1/2 cup soaked sun dried tomatoes.
