Vegan Recipes Wonderful Wild Rice Salad
Delicious Vegan Recipes for Vibrant Living! This is a fantastic summer picnic salad, a wonderful side dish for a backyard brunch, or a perfect meal for a lazy afternoon. Of course you could eat this any time of year too—it’s totally versatile in terms of which seasonal ingredients to use. Enjoy this salad no matter what the time of year. Anytime you choose to nourish yourself with this tatalizing treat of a salad is a good time! Ingredients: 3 cups cooked wild rice ½ cup sliced or chopped carrots ½ cup broccoli florets, steamed for just 5 minutes ½ cup fresh parsley, chopped ¼ cup fresh dill or mint, finely chopped ½ cup cucumber or zucchini, chopped into small chunks 2 tablespoons olive oil (use extra-virgin if possible) 2 tablespoons lemon juice (freshly squeezed tastes best)Salt and pepper to taste Just put all of the ingredients in a medium-sized bowl and mix well. Serve at room temperature or chilled. Serves 2-4. A few variations: cauliflower instead of broccoli, or do ½ and ½ add 4-5 cherry tomatoes, sliced, or 1 tomato, chopped fresh thyme, rosemary, and/ or marjoram instead of above herbs balsamic vinegar instead of lemon juice flaxseed oil instead of olive oil besides zucchini, add other summer squash (lightly steamed) if you’re unable to find wild rice, brown basmati will work just fine Eating for Energy and Fast Vegan Weight Loss Just Got a Whole Lot Easier!
