Winter Squash Parfait

Delicious Vegan Recipes for Vibrant Living!

Sounds Weird, Tastes Delicious!

Loaded with fiber and beta carotene, this parfait makes a delicious breakfast treat, a great side to a lunch salad, or the perfect dessert to a healthy dinner. Yes, it may sound a bit odd—yogurt and winter squash, but give it a try, and we think you’ll be pleasantly pleased. The texture of this is out of this world, by the way—it’s amazingly smooth and creamy.

Ingredients:

½ cup pumpkin, butternut, acorn, or other winter squash puree

1 cup vanilla yogurt (we recommend soy or rice yogurt)

1 tablespoon maple syrup or agave nectar

Generous pinch of cinnamon

Smaller pinch of nutmeg

teaspoon vanilla extract

Preparation:

Peel squash, then remove seeds and dice into small cubes. Steam until soft (approximately 15 minutes). Let squash cool for 10 minutes, then put into blender or food processor and puree until smooth. Add spices and vanilla, blend until well combined.

Place puree into bowl and let cool for 20-30 minutes.

Once cool, add soy yogurt and stir/whisk until well mixed and it’s totally smooth. Serve chilled. Makes 2 servings.

Variations:

Replace cinnamon and nutmeg with 1/8 teaspoon cardamom

Season with just cinnamon

Add a tablespoon of chopped walnuts and/or dried cranberries
