Roll Your Rock

An Eternity. That is how long our old friend Sisyphus of Greek mythology spent rolling a boulder up a steep mountain only to have it roll down again. That was his punishment for angering Zeus.

What does the tale of Sisyphus teach us? As Albert Camus, the French philosopher, said, "One must imagine Sisyphus happy." If you have to spend eternity rolling a rock up a hill you better learn to love the rock or you’ll spend forever in misery.

Well, we don’t have an eternity, but we do have a lifetime, a lifetime with the same body. We are born into one body and it carries us through our life. Whether we are sick or well impacts our quality of life. To keep ourselves healthy and vibrant requires Nutritional Excellence, Exuberant Movement, Conscious Connection, and Passion and Purpose, the 4 fundamentals of being a Vibrant Vegan.

Our Sisyphean task is to keep our bodies healthy for a lifetime by maintaining a healthy diet, participating in a regular, goal oriented exercise regimen, nuturing positive, life affirming relationships, and living your life's purpose with passion. These 4 things take work. They are the rock we must roll up the mountain. If you want your life to be wonderful and beautiful and full of love, laughter and health, learn to love the rock. You will be glad you did.

Delicious Stuffed Peppers

Stuffed Red Peppers

Here is a quick, easy, delicious, and super nutritious dish for your fruit-eating adventures! This dish contains about 300 calories.


2 Red Peppers

1 head cauliflower

3 tablespoons nutritional yeast

2 teaspoons Mexican-style seasonings (or Italian seasonings)

1 teaspoon salt

1/2 lime juiced, optional


In your food processor (or chopping with knife) process the cauliflower until crumbly. Add everything else and process/stir just until well mixed (you don't want to "food process" the cauliflower too much, or it gets too wet and icky). Remove the tops and seeds of the peppers, then stuff with the cauliflower mixture. That's it. Refrigerate if you're not eating right away.
